Chocolate-chip Muffins

Good Delicious things come in small packages; small packages, just like Chocolate-chip Muffins, the next best thing to chocolate! Talking about muffins, have you heard of the Muffin Man, or the rhyme about him? Here’s how it goes –

Do you know the muffin man,
The muffin man, the muffin man,
Do you know the muffin man,
Who lives in Drury Lane?

Yes I know the muffin man,
The muffin man, the muffin man,
Yes I know the muffin man,
Who lives in Drury Lane.

Do you think we’d still find Muffin Man if we looked on Drury Lane?? Unfortunately, I cannot add the tune to the rhyme here, else I’d sing it for you ‘cos I still remember the tune from my play-school days. Muffin – the word always brings a smile to my face ‘cos I remember my play-school days when Amma would pack a muffin or a cup-cake and some dry-fruits for short break. I’m supposing they were more cupcake than they were muffin, but back then, when I was just about 3-4 years old, I wasn’t expected to know a muffin from a cupcake, was I? So I still happily continue to delve in those sweet memories of me gorging on my cuppie cakes during short break! I recently made these swooningly chocolate-y tempti-licious muffins, and the occasional bouts of chocolate exploding in the mouth amidst the vanilla was oh so sensational! Here’s a classic case of food porn if I may call it so without sounding impish 😉


  • All-purpose flour/Maida – 2 1/2 cups (250 gms)
  • Butter – 1 cup (250 gms)
  • Sugar (powdered) – 2 cups (250 gms)
  • Eggs – 5 nos
  • Baking powder – 1 tsp (5 gms)
  • Milk powder – 1 tbsp (15 gms)
  • Water – 3 tbsps (45 ml)
  • Vanilla essence – 1 tsp
  • Chocolate chips – 1 cup (as you can see, I was feeling pretty indulgent; vary quantity as per your taste)

This proportion makes 2 dozen muffins.


  • Preheat oven to 175C/350F.
  • Cream the butter and sugar together, till light and fluffy.
  • Whip the eggs and vanilla essence to a stiff froth.
  • Add the whipped eggs into the creamed butter-sugar mixture, little by little and beat well.
  • Sieve flour with baking powder and milk powder.
  • Add this mixture to the creamed mixture and mix at a very low speed in one direction.
  • Add the water to the batter to get a dropping consistency.
  • At this point, you could stir-in your choice of additive flavour like chocolate chips, any fruit crush (I’m a little partial to strawberry), raisins, nuts, fresh cranberries…you get the drift. I chose chocolate-chips since that was what I had on hand. So, stir-in 2/3rd of the chocolate chips and incorporate well into the batter (I’ll give you a really good idea to use up the remaining 1/3rd a little later, so just hang in there).
  • Place muffin paper liners in your muffin tray, and spoon the readied batter onto readied muffin moulds. Dont bother about leveling the top, just drop a spoonful of the batter into each mould about 3/4th full, and keep going; the muffins will even out as they bake.
  • Now comes the food porn moment – from the remaining chocolate chips, sprinkle a copious amount on top of each muffin, just for some extra kicks (now you know what I meant when I said I’d give you a good idea to use up the remnant chocolate-chips!)
  • Bake the muffins for 20-30 minutes or till you have a lovely golden crust.
  • Cool on a wire-rack turned upside down so that the fat does not settle at the bottom (that’s a trick an expert baker taught me). Enjoy them muffins with a nice hot cuppa and mollycoddle your chocolate cravings, and don’t forget to think of me when you do!

Note: If you do not wish to make muffins, pour the readied batter onto a greased and dusted square-baking dish and bake at the same temperature for 20-30 minutes, or till you see a golden brown crusted surface. Put it through the toothpick test to check done-ness. Once done, cool on a wire rack, cut into slices and voila, you have a piquant tea-time cake!

    Please could you tell me where to find a muffin pan in Bangalore? I made my friend lug one all the way from the US only to discover that it was too big for my oven 😦

      Muffins trays arent hard to find in Blore. Which area are you in ?
