Common Ingredient Substitutions

Some useful ingredient substitutes. Hope you all find them useful.

Sour milk 1 cup 1 tablespoon vinegar or lemon juice mixed with enough milk to make 1 cup: Let stand 5 minutes to thicken
Soy sauce 1/2 cup 4 tablespoons Worcestershire sauce mixed with 1 tablespoon water
Sweetened condensed milk 1 (14-ounce) can 3/4 cup white sugar mixed with 1/2 cup water and 1 1/8 cups dry powdered milk: Bring to a boil and cook, stirring frequently, until thickened, about 20 minutes
Vegetable oil–for baking 1 cup 1 cup applesauce OR 1 cup fruit puree
Vegetable oil–for frying 1 cup 1 cup lard OR 1 cup vegetable shortening
Vinegar 1 teaspoon 1 teaspoon lemon or lime juice OR 2 teaspoons white wine

    i want to make an eggless cake. my mum says flax seeds are very warm for the tummy and it wont be a good idea to use them in summer…. is it so?
    another thin in place of egg can i use yogurt? i am planning to make Dark Chocolate & Orange Gateau.

    • Dear Neha,
      Sorry about the delay in my response…I’ve been a little busy on the personal front.
      Coming to your query, I have never personally heard that flax seeds are hot for the body, or for that matter, anything negative about them except that pregnant women cannot have them. They are really good for health, and I think you should use them in your cooking/baking as much as you can just for the health benefits if not for anything else.

      I must tell you though, that flax seeds cannot replace the eggs in the Fatless Chocolate Sponge recipe, simply because of the fact that flax seed powder in place of eggs wont work in that recipe.

      If you wish to make the Dark Chocolate & Orange Gateau, and want an eggless cake for a base, you can try any one of these –
      Vegan Chocolate Cake
      Eggless Butterless 5-minute MW Chocolate Cake
      Basic Eggless Sponge Cake (replace 20% of the maida with cocoa powder)
      If you are using the basic eggless sponge cake recipe, depending on the cake size you are looking at, you may have to bake 2 nos 8-inch round/square cakes and then proceed with filling and frosting, ie, make the batter twice and bake a 8-inch round cake each time. I hope this helps answer your query. And I do hope your gateau turns out very well. Keep me posted.
